Sorry, took a while to find the right book. I have changed a few things, but I can never remember the "base." A nice feature is that it's really simple and even when you screw it up they taste good.

4 cups buttermilk biscuit mix (I use Bisquick)

1 "generous" cup of shredded cheese. I have been using cheddar, but I will end up trying other cheeses someday.

1 pound bacon. I have had my best results so far with really thick cut bacon. Gwaltney makes one that comes in a 1.25 pound package with maybe 14 slices in it. I slice it once lengthwise, then into 1/4 - 1/2 inch bits. Fry them up until they are crispy.

1 cup milk.

I mix everything but the milk together, then add it in. You don't want to overmix or flatten the dough out too much or your biscuits will be flat and hard. I like to make bigger biscuits, and I will get about 8-10 out of a batch. Put them in the oven at 375f for about 16-18 minutes, depending upon your oven. You may need to check the inside of one to make sure that it is done all the way through.

I dont know... You might have to double the recipe if you wanted to make biscuits the size of yoga balls.

As a side note, I have found that one of the best pans for making bacon bits is a wok. High sides cut down on the mess, and the fact that the oil gets deep towards the middle helps to make sure the fatty parts of the bacon get cooked all the way.
